Yucatan Salmon

Inspired by the traditional ingredients and cooking techniques of Mexico's Yucatán Peninsula, roasted Atlantic salmon is served with an Achiote Citrus vinaigrette, featuring orange and lime juices, garlic, spices, and achiote paste, which gives a signature reddish hue and slightly earthy, peppery flavor. It is accompanied by fried plantains, roasted corn salsa, quinoa, black beans, and pickled onions, with the Achiote Citrus vinaigrette served on the side.
